You copy stuff to the hard drive either by copying it from the optical drive or the SD card slot.

The drive is internal to the unit and isn't meant to be removed but there is a thread on VWNavi where someone has replaced his drive with a larger one. There is some discussion about the type of drive as the OEM one is (apparently) designed to cope with the temperature ranges and vibrations of being installed in a car.

Personally I wouldn't complain, I wouldn't expect it to have 30Gb free for storing music even if it were a 30Gb drive dedicated to it since HD manufacturers would say that a 30000Mb hard drive is 30Gb when it isn't.

I do think VW could do a better job of explaining the amount of space available for music storage but when just about everyone else in the industry is doing the same I can't blame VW for following suit.
